Known gotchas
Consumer lag spikes during ClickHouse merges. Treat short spikes as expected; document the point where lag becomes an incident.

- Lag alert: check merge activity in ClickHouse first, then consumer health.
- Restart: confirm offsets are committed only after a successful insert.
